About the role
This interview is about being the operational second-in-command in a professional kitchen. The panel wants a chef who can run the pass, maintain technique and safety, improve cooks and make practical decisions about yield, supply and menu quality.
How to prepare
- Prepare to explain how you build a prep plan from bookings, menu demand and station capacity.
- Choose two dishes that demonstrate different techniques and be ready to discuss consistency and yield.
- Review safe cooling, reheating, storage, cross-contamination control and corrective action.
- Think of a service problem you led through and what you changed before the next shift.
- Practise explaining how you assess a cook's gap and coach them without disrupting service.
Common mistakes
- Describing yourself as the strongest cook without showing how you improve the brigade.
- Using unsafe food to avoid waste or protect the night's figures.
- Changing ingredients without recalculating yield, allergens and selling price.
- Shouting through a service problem instead of giving short, clear direction.
